Create a virtual date night

Check out the below video for top tips from our friend @whatwillycook. You can create the perfect virtual date night with his steak and garlic butter recipe so you can enjoy a Valentine’s Day to remember, even if you can’t spend it together.

Tip number 1, make sure your wifi is definitely working…

Ingredients:

  • 1 ribeye steak 
  • Chunky homestyle frozen chips
  • Half a pack of salted butter
  • Handful fresh parsley
  • 3 cloves garlic
  • Salt & pepper
  • Tbs olive oil

Method:

1. Heat oven to 220ºC and pop in your chips. Cook as per instructions, but I recommend to cook 3 minutes extra so they are a little extra crispy.

2. Soften your butter in a bowl in the microwave for about 20 seconds. Peel two cloves of garlic and add them to a food processor with a handful of fresh parsley. Add your butter and blitz. 

3. Cut a triangle of baking paper and spread your butter out on it. It should be soft and you should be able to roll it into a sort of sausage shape in the paper. Stick this sausage in the freezer for 10 minutes to firm up.

4. Season your steak with salt and pepper on both sides. Get a frying pan screaming hot and add a splash of olive oil. Sear your steak for about a minute on both sides. Then bash a clove of garlic and chuck it into the pan with a tablespoon of butter. Allow the garlic to infuse with the melting butter and use a spoon to baste the steak for a minute or so on each side. Remove the steak from the heat and let it rest for 4 minutes or so.

5. Get your chips out and serve up with your steak. Use a sharp knife to slice a disk of herby garlic butter and top your steak with it. Enjoy the romance.



Valentine’s Pomegranate Gin Fizz

It’s Prosecco and gin o’clock… Pair them together using our I Heart Prosecco to make this tasty Valentine’s Pomegranate Gin Fizz.

Ingredients:

  • 25ml gin
  • 50ml pomegranate juice
  • 50ml prosecco (approximately)
  • Pomegranate seeds and rosemary springs, to garnish

Method:

1. Mix the gin and pomegranate juice together and divide between the two glasses. Top with prosecco and garnish with pomegranate seeds and a sprig of rosemary to serve.


Jammy Dodger Blondies

Looking for a lovely and easy bake to do this Valentine’s Day? Try these Jammy Dodger Blondies from @hellobakergirl

Makes 15 slices | Time: 50 mins

Ingredients:

  • 230g unsalted butter, melted and browned
  • 300g soft light brown sugar
  • 3 medium eggs 
  • 300g plain flour 
  • 120g white chocolate, chopped into chunks
  • 3 tbsp raspberry jam 
  • 1 pack Jammie Dodgers/Mini Jammie Dodgers

Method:

  1. Preheat your oven to 180oC fan oven. Line an 11 x 7 inch baking tin with baking paper.
  2. Brown the butter by melting over a medium high heat. When the butter starts to finally create frothy micro bubbles and you can see brown particles forming at the bottom of the pan, you have brown butter. This gives the blondie a more caramelised, nutty rich flavour.
  3. Pour the hot melted butter onto the sugar. Make sure you scrape in the brown bits from the bottom of the pan. Leave this to cool for a few minutes.
  4. One at a time, add the eggs, combining each one as you go. Adding the eggs onto hot sugar and butter can cause the eggs to scramble, that’s why we let it cool a bit first.
  5. Stir in the flour well. You want to make sure it’s thoroughly mixed and the batter is coming away from the sides of the bowl. If you under-mix, this can cause the butter to seep out, giving you a greasy blondie so give it some welly at this stage.
  6. Fold in the chocolate chunks.
  7. Scrape the batter into your prepared tin and dot the jam on the top. Then add the Jammy Dodger biscuits pushing them slightly into the surface of the blondie.
  8. Bake for around 35 minutes in the middle of your oven until the blondie is baked through. Test with a skewer to see if it’s ready. A few little sticky crumbs on the skewer is great, wet batter is not. It wants to be a little undercooked in the middle.
  9. Remove from the oven and allow to cool completely before slicing.
